In Lain Hotel Cadonau This place is nothing short of a little gem in a corner of paradise where everything is done to make your stay unforgettable. By way of introduction, we are fine gourmets and have had the opportunity to visit many Michelin-starred establishments in France and abroad. We stayed for several days at the IN LAIN hotel (1 star, 17/20 Gault et Millau) and had the pleasure of a gourmet meal with eight courses. Simply put, it was a memorable experience: the cuisine is original, refined, with meticulous presentation and outstanding service. I must admit that I had to double-check whether the restaurant had only one Michelin star, as it seems it deserves a second star. The chef pays very special attention to his cuisine, and everything is made in-house here: bread, butter, and even several cheeses, a rare feat worth noting. Some dishes will stay engraved in our memory, such as the vegetarian mushroom dish accompanied by an equally vegetarian reduction, a dish bursting with flavors, as well as several perfectly cooked fish dishes with delicate accompaniments. It's worth noting the balance of the dishes (acidity, harmonious balance of salt/sugar, a rich combination of textures and temperatures). The desserts are equally remarkable for their lightness and finesse, without an excess of sugar. I recommend it without hesitation, hoping that the renowned Michelin Guide will soon award them a second star.
