Soulful Chicken White Soup Ramen & Fu-Da Xingde Pingtung Night Market Tofu Pudding

Located in the 514 Alley near Fu-Da University, this area is known for its Italian cuisine. However, this Japanese ramen shop, which started around 2021, has managed to survive the challenges of the pandemic, proving its quality! As the name suggests, this shop specializes in chicken white soup ramen. The prices are very affordable, all under $200, except for the Bubble Style Special Ramen priced at $220. Plus, you can get an extra serving of noodles for free, making it a favorite among Fu-Da students 🥳 At the entrance, there’s a self-service ordering machine. Besides ramen, they also offer grilled mentaiko rice bowls, but unfortunately, these are often sold out by around 12:30 PM! I was really hoping to try a combo of rice bowl and ramen 🥹 I ended up ordering a Bubble Style Special Chicken White Soup Ramen and the Signature Chicken White Soup Ramen. During the ordering process, you can customize the type of noodles, their texture, and the flavor intensity. Although both are chicken white soup ramen, the broth differs. The Signature Chicken White Soup Ramen has a richer flavor and can be made spicy, while the Bubble Style Special Chicken White Soup Ramen is lighter and doesn’t feel heavy even after finishing the bowl. However, the bubble-style ramen only has a thin layer of foam on top, which is quite different from the authentic Japanese version. For those accustomed to Japanese ramen, it might feel a bit bland 😅 On the table, there’s chili powder and fried garlic flakes available. I noticed a lady at the next table adding garlic flakes multiple times, so I tried it too—it’s a nice way to change up the flavor midway! I ordered an extra serving of noodles, but later thought I should remind the owner to help me cut back for my diet. Turns out the owner has a great memory, and I ended up super full 😂 After the meal, I grabbed some tofu pudding from the neighboring Xingde shop, which originated from Pingtung Night Market, to enjoy as dessert at home!
