Molecular gastronomie

This isn't your regular type of dining. It's molecular cuisine, one way of putting it. There are about 8-9 people at once who get to enjoy different courses guided by the chef. It is located on the 30th floor of The Mandarin Oriental hotel, inside the Oriental bar which serves food and cocktails. Some dishes were excellent such as the main of wagyu beef, the remains of the carrot, the crab and coffee and the truffle foie grae. The views from the lounge are stunning. The staff were very friendly and attentive, and the chef was a wonderful host. The food was small in portions, but packs a lot of flavors. A lot of liquid nitrogen used to freeze food, which is quite an interesting concept as well as some blow torching of fish. All in all an entertaining dining with maybe a bit too much chest beating on the chefs part. #japantrip #molecular #specialfood
