They grind it slowly and carefully in a large stone mill, and the soup is rich and very flavorful, combining a two-week aged buckwheat flour and a dashi stock made from carefully selected dried bonito flakes. There were many menus and I was undecided, but this time I wanted to enjoy the taste of their carefully selected soba and soup, so I ordered a simple itaseiro. The green onions and wasabi added as accents and were very delicious. And above all, it was reasonably priced and good value for money. If it was nearby, I would go there every day.
