Clay Pot Loofah Fish (a signature dish awarded the 2014 Taoyuan County Gold Medal Best Restaurant). The fish fillet is made with minimal bone from the belly, then braised with thinly sliced loofah. The sweetness of the loofah blends beautifully with the freshness of the fish. Highly recommended! 2. Clay Pot Fish Head Soup This is a classic hot pot at Live Fish Restaurant! Unlike other clay pot fish head dishes that use shacha as their base, this one uses only natural ingredients like Chinese cabbage, tofu, vermicelli noodles, daylilies, and wood ear mushrooms. The fish head and Chinese cabbage are then simmered, resulting in a white broth that's low in oil and salt, making it relatively healthy and less taxing on the body! The owner also makes the frozen tofu herself! Delicious! If this isn't included in your order, you can ask the restaurant to upgrade it for a price – it's guaranteed to satisfy! 3. Crispy Sweet and Sour Fish Unlike other restaurants that use tomato sauce, Yulan's sweet and sour fish uses black vinegar. The acidity of this vinegar is even more stimulating! For this dish, the fish is cut into diamond shapes and folded back before frying. So, instead of bones, the inside is filled with skin!
