Hidden House Ramen 🍜 at Shuangcheng Night Market left a lasting impression on me. It's definitely a place worth recommending. First, you can choose from thin noodles, medium curls, or thick noodles. The noodles themselves are quite plain in flavor, so you need to mix them well to fully absorb the taste of the broth. The broth is the highlight of this restaurant. The chicken soup has a refreshing and light flavor, making it enjoyable without being overly rich. On the other hand, the yuzu-flavored broth offers a rich seafood taste with complex layers of flavor. Both types of broth are unique and incredibly delicious! Another standout feature is their sous-vide duck meat. Since the duck is seared before cooking, it has a wonderfully aromatic flavor. The meat is thicker and more substantial compared to regular ramen char siu, offering a satisfying chew. I can see why people recommend ordering the deluxe char siu platter—it lets you enjoy more of the delicious sous-vide meat slices, which are definitely a highlight of the ramen. On Saturday nights, expect a queue of around ten people, with a waiting time of about 30 minutes. The restaurant has approximately 13 seats, and the freshly prepared dishes take about 10 minutes to serve. Highly recommended with 5 stars! 👍
