Datil is simply a type of plum, but it has now become Proust's madeleine nestled in the heart of Paris' 3rd arrondissement. The chef at this restaurant takes pride in his dishes, which skillfully use vegetables and grains. It's both confusing and incredibly comforting, showcasing an exceptional level of meticulous care. By skillfully combining flowers, vegetables, fruits, grains, and fish, a harmonious tribute to nature and the environment is created. The flavors are astonishingly unique, and the presentation of the dishes is beautiful. The staff were incredibly knowledgeable and welcoming. Every moment of this dining experience was enjoyable. Besides wine, we headed to one of the largest terroirs of Chenin in Montlouis-sur-Loire. With a beautiful bottle in hand, it elevated the culinary dance throughout the night.
