Signature Maoming Rice Noodles I noticed every table ordered this dish. It must be their signature dish, with sesame and sesame oil added. The flavor is incredibly aromatic. Soul Sauce Tofu This green tofu is something I've never seen before. One bite reveals a silky filling. The sauce mixed with rice is so delicious that I could eat two bowls of rice with it. Dark Nine-Spined Stickleback Fish It looks pitch black, and I initially thought it was some kind of experimental dish. The fish is crispy on the outside, tender on the inside, and has no excess bones. Each bite is incredibly satisfying.
