I visited Hanaoka, the most famous Hitsumabushi restaurant in Nagoya, and the eel was thick, chewy on the outside, and perfectly seasoned with a salty flavor—it was absolutely delightful. Locals were lining up for it, which shows how popular it is. Highly recommended!
