Ultra-Rich Ramen Delight

Upon entering the restaurant, you're greeted with the strong aroma of pork bone broth, which some might find a bit too intense, but as someone who enjoys bold flavors, I find it quite to my liking. Similar to many ramen shops, you purchase your desired dish from a vending machine and hand the ticket to the staff, and soon enough, your meal is ready. The basic tonkotsu ramen has the expectedly rich and creamy broth, but it's not overly sticky, a quality that sets it apart from most ramen shops in Hong Kong. The pork chashu is separated into lean and fatty parts. Due to its thinness, it's never chewy, and the taste is decent. The noodles are thin and slightly soft, but fortunately, they still retain a pleasant texture, which is quite good. The special tonkotsu ramen includes a few extra sheets of seaweed, an egg, and dumplings. The egg is cooked to a runny consistency and is very flavorful. The dumplings have a small amount of filling, but the skin is very smooth, which is impressive. The pan-fried dumplings come in servings of five or ten. For someone who enjoys smaller portions like me, five is enough. The dumplings are on the smaller side, and the bottom could be fried to a crispier texture, but the taste is still quite good.
