WATERMARK at Skyline Pier in Central has reopened! WATERMARK's signature "SEAFOOD PLATTER" is really good for 3-4 people, with Boston lobster, oysters, prawns, scallops, mussels and squid, everything is fresh! The lobster meat is tender and juicy, the oysters have a smell of sea water, it really feels like going to the seaside. Also to mention their homemade dipping sauce, the classic cocktail sauce is sour and spicy, and the apple cucumber mussel sauce is fresh and fragrant, really paired with seafood, simply perfect! The best part is their lemon mustard yogurt sauce. “Beethead and Burrata Cheese”, the slight sweetness of the beetroot paired with the rich and smooth burrata cheese, the added pistachio and figs add to the palate, and the sourness of the eight-treasure vinegar balances the overall taste, really refreshing! The “light marinated fish”, with fresh and delicate slices of oily fish, with the fluffy texture of avocado and the crispness of sauerkraut, it’s really layered with the lemon peel that adds a little acidity to this dish, and the crispiness of buckwheat brings a surprising contrast of taste to the whole. "Wagyu Tata", the fat aroma of Wagyu beef with the refreshingness of green papaya, it's really good, plus Jinshanji miso, a combination of Chinese and Western, it's really good! The "Spicedly Pan-fried Hokkaido Scallops", the scallops are crispy on the outside and tender on the inside, served with smoked mashed potato foam and Parmesan cheese. The “grilled prawns”, the prawns are tender and juicy, the slight sweetness of the Western miso paired with the spiciness of the chili, the crispness of the sweet potatoes and the slightly salty taste of the seaweed make this dish richer and not too greasy. “Grilled octopus,” the addition of octopus grilled until crispy on the outside and tender on the inside, the addition of white beans and olives adds to the lightness of the dish, while the slightly sweet spiciness of the sun-dried tomato sauce adds a Mediterranean flair to the dish. "Deep sea white squid", using white squid from Antarctic waters, the fish is tender and smooth, with Japanese pumpkin, pearl barley and spices. “Dry Aged Specialty Ribeye Steak”, the sirloin steak is dry-aged for a richer, tender and juicy meat, served with grilled broccoli and French fries. The “Three Yellow Chicken Roll”, a chicken roll made with tender three-yellow chicken, is tender and juicy with the freshness of sweet corn and mushrooms, adding layers to the dish. "Ink Pasta", the freshness of cuttlefish with Italian rice. “Coffee Italian Cheese Mousse” with a strong coffee flavor and smooth and fragrant cheese. The “Mango Coconut Protein Crisps” are beautiful in appearance, crispy and fragrant, the coconut mousse is fragrant, the mango is sour and sweet, with grapefruit and passion jam. The signature cocktail, WATERMARK, uses Flor de Caña 4yo as a base and served with Malibu, raspberry and guava juice. The GIMBLET uses Stranger & Sons Indian Gin as a base with grapefruit juice and cinnamon honey.
