Stewed Sea Cucumber with Agaricus Blazei and Conch Head Soup is the essence of Cantonese cuisine. Ingredients are placed in a stew pot and steamed. It is warm and dry in nature and has the effect of nourishing yin and replenishing the body. The stew pot is simple and elegant. When the lid is opened, the original juice of the ingredients can be seen without loss. The appearance and texture of the food are preserved, and the taste is refreshing and warming. Grilled sweet porgy scales This dish, which is usually found in Japanese chefs' recipes, is deep-fried in the Cantonese style, making it crispier and more tender. The fish sauce is poured over it to make the flavor burst. 48-hour slow-cooked beef ribs with purple yam The main course is slow-cooked beef. The part that looks like fat is actually the tendon. The texture is a bit chewy, but not hard to chew. The meaty flavor oozes out when chewing. Crispy Fish Maw with Creamy Fish Roe It was my first time to taste fried fish maw. The batter was thin and crispy, a bit like the oily and crispy feeling of fried oyster cakes. The gelatinous texture of the fish maw spun back and forth in my mouth. It was paired with Western-style cream sauce and salmon roe, which was novel and unique. Braised Crab Meat with Vegetables The fresh crab meat is separated and thickened and placed on the spinach. The salty taste has the refreshing feeling of vegetables and the amount of oil is a little high. Tai O Prawn Roe and Seaweed Lo Mein Using local Tai O shrimp roe to prepare lo mein really shows the authentic Hong Kong style. The orange shrimp roe is eye-catching and the taste is sweet and rich. The fried seaweed has a natural salty fragrance. XO Sauce Seafood Fried Rice XO sauce is an important sauce invented in Hong Kong. It is made from seafood and chili peppers.
