While searching for a ramen spot in Sydney, I visited Chaco Ramen in Darlinghurst. The restaurant isn't very large, but it has a cozy atmosphere reminiscent of a Japanese izakaya. Thanks to the warm lighting, dining alone felt comfortable. I ordered the Fat Soy Ramen, and the rich, savory broth paired perfectly with the noodles. The chashu was tender, and the soft-boiled egg was cooked to perfection. If you enjoy thick, flavorful broths, this is a must-try! For those who like cilantro, the Chilli Coriander Ramen is also a unique option—it has a slightly spicy mala flavor that's quite addictive. The karaage I ordered as a side was crispy on the outside and juicy on the inside—absolutely satisfying! It’s the kind of dish that makes you crave beer. I heard there might be a wait, so I went right at opening time and was lucky to get seated immediately. The staff were friendly, making the overall dining experience pleasant.
