Yakiniku Ushiwa
My first time in Akishima. This is a restaurant that is licensed to handle raw meat, so as a raw meat lover, my expectations were quite high. lol
The restaurant had private rooms, semi-private rooms, and regular seats, so it seemed like it would be easy to use depending on the situation.
I had noticed Boksandga's makgeolli when I went to Korea, so I decided to decant it and toast.
Carefully selected meats, mainly Japanese black beef.
Ushiwa's homemade kimchi platter ¥980
3 types: Chinese cabbage, kakuteki, and oi kimchi.
The spicy cabbage kimchi with chili peppers goes well with beer.

You can choose the sweet miso to your liking.
Ushiwa Silk Yukhoe ¥2480
This is a must-try! The rich yolk and the creamy texture of the meat go perfectly with the sweet sauce.
Salted Yukhoe (with green onions) ¥1480
I was torn between the sauce Yukhoe and the salted one, but I went for the salted one!
It's soft but chewy, and you can taste the flavor directly from the meat.
Liver ¥780
The fresh liver was sold out, so I went for the regular liver.
It's best to dip it in plenty of sesame salt.
Rib roast ¥3300
It wasn't on the menu, but it was recommended on the blackboard, so I ordered it.
It has a fine texture and a refined taste.
The cuts are large, so it feels luxurious.
I recommend grilling the surface well and the inside rare!
You can feel the sweetness of the fat...✨

Grilled while wrapped in green onions!
To be honest, it's difficult to grill it while wrapped...but the tongue's moderate elasticity and chewiness go perfectly with the green onions! I enjoyed it with the classic lemon juice for a refreshing taste.

The crunchy texture and the sweet miso sauce make you want to eat rice!
Ushiwa loin ¥2280
The flavor of the lean meat is concentrated, and the more you chew, the more the meat flavor spreads in your mouth.
Crunchy plum and grated barley rice in a clay pot ¥1680

It takes about 30 minutes, so it's recommended to order at the right time!

Recommended for those who like a refreshing finale! It's enough for 1-2 people, and it's about the same amount as 4 bowls of rice, so I was very satisfied.
The staff were polite from start to finish, and had lovely smiles.
They were just the right distance away, so I was impressed.
They also changed the nets frequently.
Honestly, I was blown away that there was such a great restaurant in Akishima. lol
If you take the Chuo Line, it's only a short ride from Shinjuku,
so it's worth going at least once◎
