I drove through Ningxia and ate many mutton meals in three cities, Yinchuan, Wuzhong and Zhongwei, but the one in Zhongwei was the best. I ordered the premium mutton soup, the meat was tender and had no smell; the shallot eggs and cold rice noodles were also delicious, highly recommended.

The first delicacy you must try when you come to Yinchuan, Ningxia is hand-pulled lamb chops. The best lamb is from the Yanchi Beach, which has delicate meat and is not smelly. Order a large plate and enjoy it with traditional noodles, sand onions, wolfberry leaves, etc., and you will feel very satisfied.

When you go to Ningxia, you can only eat mutton with your hands, some mutton soup, some pasta and pie, and local cold dishes such as sand onion and wolfberry tea. This is an authentic Ningxia meal. The mutton should be from Yanchi Beach, and the most important thing is that it is fresh, not smelly or greasy. This one is also OK, but don't be too demanding about the environment.

Opposite the Catholic Church on Nanyuan West Road in Zhongwei, the taste of Ningxia's beach lamb is really good without any smell. The hand-pulled lamb is the specialty and is served with Xixia beer. People all say that people from other places come to eat here, while locals go somewhere else!!!
