This is a great cooking class if you are looking to make authentic Ecuadorian dishes. The class starts with a trip to the local market to learn about the colorful and delicious fruits and vegetables that are grown in Ecuador. Next, we met up with the chief and her assistant and made the most wonderful dishes. Everyone was so kind, knowable, and helpful as they guide you through the recipes, how to cook/prepare the food and share a wonderful meal at the end. You get to wear a chief’s hat, apron and participate though out the cooking process. Everyone speaks English and you are given copies of the recipes you make.

Maria generously opened her own home and kitchen to my husband and I for this hands-on cooking experience. We learned how to choose green plantains and make cheese stuffed empanadas, which are delicious and healthy - a real game changer if you want to avoid gluten or typical wheat flour doughs. Pressing the empanadas was fun - we have already ordered a tortilla press for our home use and will make this recipe frequently.
We also made fresh shrimp ceviche and learned that Ecuadorians cook the shrimp first. Many of the ingredients came from Maria's own backyard, which is an amazing array of fruit trees (50 foot avocado trees!) and herbs. The lemon verbena lemonade was amazing!
We had Maria arrange a private ride for us from the Wyndham Quito Airport hotel for a very reasonable extra fee. I highly suggest this, as she lives in a gated community and our driver knew how to get in. The drive was beautiful and interesting - especially the neighboring town with all the guinea pigs hanging on the street. We did not eat any of these, but wow are they huge!

Santiago took us on a wonderful journey, starting with a gallery featuring well known and up-and-coming street artists (think Obey, who did the famous blue and red Obama poster which said “Hope.” We then walked through a lively part of the historic district, while he showed us murals and explained the significance, interspersed with delicious traditional food from different sites. He was engaging, interesting, and knowledgeable, and showed us a part of Quito that we would have never found on our own. We loved it, and our teens were thrilled. Thanks, Santiago!

We were looking for a half day tour which would give us an orientation to Quito after a late arrival the day before. The convenience of a hotel pickup made things very easy for us.
Andres gave us a great introduction to the local cuisine, visiting landmark businesses we never would have found on our own. We had a lot of fun trying the amazing variety of foods based on the abundant fruits and vegetables grown in Ecuador. Walking through Old Town in pursuit of these foods made it perfect. Thanks to Andres for his great selections and knowledge.
