Now I know how olive trees are nurtured and cared for, and then how the olives are harvested from late autumn into January. They are immediately pressed, and the oil is bottled. You can tell that the co-owner of the mill, who gave the tour, is truly passionate about her work, and she conveys that enthusiasm with infectious passion. The highlight: a varied lunch with different olive preparations, cheeses, fruits, breads, and more. Delicious!
