Wufangzhai no longer just sells zongzi (sticky rice dumplings); they've also launched a popular deboned mutton noodle soup! I couldn't wait to try a bowl! The mutton here is made from Huzhou sheep, simmered overnight in a large iron pot over a wood-fired stove. The meat is tender with little fat, and cooked with the skin on. Plus, it's all deboned in large chunks, not thin slices—so satisfying with every bite! They even add sheep tripe! I love it! The noodles are usually thin. You put the noodles over the mutton first, and soon the aroma of the mutton permeates the noodles. The mutton is tender and juicy, with a savory braised flavor and a touch of sweetness. On a cold day like this, a bowl of this is so warming—perfect for my Chinese palate! After finishing the noodles, I also packed a few large meat-filled zongzi to take home.
