We chose a humble farmhouse restaurant near Pingxiang North Station called Farmhouse Rice and Tianzhong Pig-Slaughtering Restaurant, brimming with a rich, rustic flavor. Jiangxi stir-fries are a common sight on many streets in my small town in eastern Zhejiang, and I frequent them frequently. However, this Pingxiang farmhouse restaurant truly redefined my Jiangxi people's love of spicy food. I'm not sure if this farmhouse restaurant represents Jiangxi cuisine, but it certainly represents Pingxiang cuisine. Since everyone can handle spicy food, we didn't ask for less spice. Almost every dish uses a month's supply of fresh chilies from Guangdong families. The raw, untamed heat of chilies is used in its simplest and purest form—stir-frying—to envelop the flavors of other foods, stimulating both taste buds and sweat glands. I particularly like the couplet at the entrance to the restaurant: "Don't say the iron pot is small, it stir-fries the world with homesickness." Spicy and spicy food is perhaps the essence of homesickness for Jiangxi people. Frankly, eating spicy food after a hike is like a dopamine rush; it's a perfect match. The dishes at this farmhouse restaurant are also incredibly fresh. Vegetables are placed right at the entrance, and while you eat, you can see the kitchen ladies picking and washing them. There's a casserole of spring water fish, stir-fried free-range chicken, spicy and sour kidney slices, the signature pig-killing dish, stir-fried frog and eel, and stir-fried bamboo shoots with pickled mustard greens—none of them are disappointing. And the value is excellent, at around 45 yuan per person. Even Jiangxi stir-fries in Zhejiang cost more than that.
