Many towns in Guizhou have beef noodles, mutton noodles, spicy chicken noodles, and rice tofu. But since I came to Kaili, I still struggled to eat the sour soup noodles with Miao characteristics. After checking around, I found a sour soup casserole noodle shop that has been open for 11 years near the museum. Well, this is it. On such a cold day, eating a bowl of hot casserole noodles will definitely make you sweat all over.

I followed the navigation to come here. It was around 9 o&#39;clock in the morning. The peak dining time had passed, but there were still many people at the ordering counter. It was also quite common for the takeaway guy to take 5 or 6 bowls at a time.

Clay pot noodles are also a delicacy that can be found in any town in Guizhou. The soup base varies according to the specific location, including clear soup, spicy, sour soup, braised pork, spicy chicken, etc. In a small pot, in addition to noodles, there are also rich vegetables. This store only sells clay pot noodles. A large stove can cook more than a dozen pots at the same time, which is lively and down-to-earth.

Alas, I lost 20 points for this one. Then I found that the rice noodles here in Kaili are thinner and harder than those in Guiyang. Even after being boiled in the clay pot, the taste is still hard.

Cooked in the pot with the sour soup rice noodles are shredded cabbage, fresh mushrooms cut into very thin slices, pearl meatballs as small as the tip of a finger, very thinly sliced ​​pork liver, and some ham sausage. The best thing in the whole pot should be the small meatballs, the size of a fingertip, but very fragrant, the original native pork with the meaty freshness, makes people happy.

To be honest, the ingredients of this clay pot noodles are quite solid. It is also quite fresh, but the soup lacks some freshness and fragrance.
