Last night, the opening act resembled the filming of a spin-off of "One Meal to Godhood," with the theme of "medicinal cuisine." This time, at Jingyan Hanlin Academy, sharing the stage with Master Duan was Jerry Tian Zeyu, the star chef from Shenzhen Avant. The group of gourmets sitting next to me came from all over the country. Many had bought tickets to see their idol's meal, some having attended more than three consecutive shows. Master Duan Yu's personally prepared Beijing roast duck noodles and star chef Jerry's handmade soy sauce gelato (today it was scallion oil noodles in ice cream version) were definitely worth trying for fans. The appetizer was fried dough rings and tofu pudding, neither too sweet nor too savory, as it could be enjoyed in both ways. The five-finger peach chicken broth soup paired with dried tangerine peel, goji berries, and turtle pastry uses extreme heat to stimulate the body's energy; then, extreme cold stimulates the taste buds: sunflower chicken served on a bed of liquid nitrogen marinade, and garlic-infused olive oil Dalian clams (with crispy fried lily bulbs and garlic) leave diners exclaiming with delight. It was my first time trying medicinal Chaozhou snails; the crispy snails poached in chicken soup with scutellaria and codonopsis, even though the snail meat is considered cooling, made my face flush afterward. The black truffle shark collagen and hanging gourd bird's nest soup were also first-time experiences for me; I felt the ladies present wanted to throw away all their bland health supplements. Master Duan Yu's sand onion and Sichuan peppercorn sauce ignited the entire room's enthusiasm for lamb chops and baked buns; its silky, spicy, and tantalizing flavor truly appeals to both northern and southern palates. Jerry and I were chatting when he discovered that adding crab roe to the broth of braised pork belly and pomfret while cooking perfectly balanced any fishy taste, breaking the mold of typical crab roe flavors on the market. This time, the soft-boiled scallops, with their combination of crab oil and white truffle, were even more flavorful, almost exhilarating. The red snapper, soaked in preserved radish sauce, was already incredibly fresh and flavorful. The dish was prepared using the Chaoshan "steaming with a lid" method, and before steaming, the sauce was made with the rich flavor of pork belly, the salty umami of preserved radish sauce, and the refreshing aroma of wild tangerines, completely igniting the appetite. My cheeks were still warm when I woke up this morning; it seems this medicinal cuisine is quite something.
