Spanish eels are a favorite ingredient in many high-end restaurants, and the cooking methods vary. At DiverXO, the eels are first boiled in boiling oil and then added with enoki mushrooms, which is wonderful. Because the two are very similar in shape, but the enoki mushrooms enrich the taste of the eels.

Elvira Fern&aacute;ndez, a chef from Asturias, cooked this Fabada in Madrid, but it was less greasy and more fragrant. I ate all of it except the fat.
