The local heritage brand is inspired by the founder's grandmother. Ah Ma's slogan translated from Chinese is that "they not only want you to fill your stomach fully with their noodles but also want to put a happy smile on your face". Ah Ma Chi Mian is famous for their bak chor mee, also known as minced meat noodles. For me, I will always order No. 4 from their menu which is the Speciality Minced Meat Noodle, mee kia dry version with chilli @ $5.50. My review : Each bowl of the minced meat noodle is served with bouncy mee kia noodles, topped with crispy ikan bilis which further adds texture and crunch to the dish plus the 2 abalone slices on top serves to elevate the dish higher. The accompanying soup has a nice creamy protein layer forming above and style is unique with garlic undertones. The soup is loaded with minced pork, pork slices and pork liver which helps to enhance the meaty sweetness of the soup. Their famous pork liver slices, in particular, is so well prepared with a slight bouncy bite that almost resembles the texture of foie gras (as is fondly likened to locally). Add on cut chilli padi in light soya sauce if you want to level up on the spiciness. Overall, it is so satisfying that I finish up every last drop of the soup as well (check out my last photo !).
