Absolutely delightful fusion cuisine between Asian & Latin flavors

#celebrateit Raw Kitchen Hall, is the dining restaurant in Else Hotel nestled in Chinatown. Knowing the brand is from Singapore, I was actually sceptical of the value I would be able to get from the meal. But it turned out absolutely enjoyable despite the high prices. Almost every item has some creative twist and fusion in between Asian and Latin elements, on top of rich layering of flavors and textures. For example, the seemingly simple appetizer—Pad Kra Pao croquettes—already has quite a lot going on. The well-loved basil-y Thai flavors was reimagined onto a crispy croquette, which further enhances the texture of the original dish with a crispy texture from the bread and succulent texture from the prawn. Even the sauce on the side was unique, though I found it unnecessary coz the croquette is already very rich on its own. The black mamba squid ink rice was surprisingly good too. Before this, most squid ink items I ate was rather bland to be honest, but this plate was umami-packed, and each grain of rice was distinctly separated, not to mention the dramatic visual. I can’t detail the creativity in every each dish (nobody cares reading that much either). But trust me, so long as you’re not obsessed with price-performance ratio, you’d very likely enjoy the food here. Not to mention the ambience was stellar too. The indoor pillars gave off a classic Ancient Greek vibe somehow. Lately they have rebranded the place to “Raw”, else not much has changed.
