The slightly strong, unique aroma is probably due to the pork bones being thoroughly simmered. This is the Mizonokuchi branch of Kishu Wakayama Ramen Matchibo. Kyushu Hakata Tonkotsu Ramen can also have a unique aroma, but this one smells similar. The simmered soup is left to sit for two days before being topped up (see website). The menu includes the basic "Chuka Soba" that I ordered this time, as well as a variety of toppings. There are also a wide variety of other dishes, such as miso, spicy miso, tsukesoba, mixed soba, and gyoza. There are no refills, so if you want to eat a lot, I recommend ordering a "large serving."
