But amidst the rows of signs, a milky aroma mingled with the aroma of grilled food caught my eye—the scent of cheese-baked lobster. On the counter, fresh lobster shells, a rich reddish-orange, are sliced open and covered with a thick layer of cheese. Then, in the oven, amidst the flames and heat, the cheese slowly melts and strings, seeping into the sweet, fresh shrimp meat. The staff expertly toasts the surface with a torch until golden and slightly charred, instantly unleashing a burst of aroma. The first bite reveals a perfect fusion of rich cheese and seafood flavors, the springy, sweet shrimp meat bursting between teeth, with a hint of crispness and charred aroma. Each bite is like a journey between sea breeze and milky aroma, making you slow down and reluctant to let this culinary feast end. The baked lobster with cheese at Dongmen Market is more than just a dish; it's a fusion of Jeju seafood and Western flavors.
