Served in thin breadcrumbs, deep-fried until crispy and eaten whole, served with lemon and cabbage. ➡️ Fried Trout – Since Yamanashi prefecture is not near the sea, the food here focuses mainly on freshwater fish. This menu is Yamame fish – a type of trout that can only grow in clean water. The restaurant orders it from Oshino Village, famous for its clear ponds. ➡️ Shingen Hoto Noodle in Pot – The most popular menu item in this area is Hoto Noodle. It is served at almost every restaurant. Houtou noodles are similar to udon noodles, but they are chewier and thicker because they have to be kneaded by hand. They are boiled in miso soup with 10 types of vegetables and served in a hot pot.
