Join us for an exciting in-person event at The Fold. Get ready to dive into the world of fermentation! From tangy sauerkraut to fizzy kombucha, these events are a celebration of all things fermented. Immerse yourself in the flavors, smells, and textures of these delicious creations. Discover the secrets behind the fermentation processes and learn how to make your own fermented goodies at home. Don't miss this opportunity to expand your culinary horizons and connect with fellow fermentation enthusiasts. We will be running a series of stand alone fermentation classes offering the chance to craft new flavours and utilise techniques to move further towards zero waste. Topics on offer will cover different areas and skills in the following workshop sessions... Lacto fermentation (making sauerkraut, kimchi & salt pickled vegetables). May 25th & November 16th 2025 Kombucha & Vinegar creations TBC Making miso, Amazake & curing with Shio Koji. Febuary 16th & October 19th 2025 Drying, dehydration & smoke cures ( fruit leathers, biltong, herbs for teas). TBC Dairy based fermentation, Kefir, Yoghuts, Farmhouse cheese making & Cultured Butter making. March 9th 2025 Wild Beers, Country Wines & Cider fermentation. The Fold and Magic Letterpress are excited to host the very first Magic Print Fair, Saturday 28th June from 10-4pm in the Market Barn This is a FREE EVENT, with free parking and dog friendly! The fair will feature print artists of all types, from letterpress, to lino cut, screenprint and more, alongside print suppliers, selling ink, paper, equipment and everything you could imagine for the print enthusiast! Come along to purchase one of a kind art for your home, posters, prints, cards, and stationery, from local artists and printers from further afield. Or if you are a printer yourself, come to stock up on materials and supplies! This course is designed to get you as involved as possible - this includes identifying, picking and tasting a range of wild species that will be found on the day. There will also be plenty of wild food and drink for everyone to get stuck into! The focus with all of our workshops is on the 4 'F's of Foraging: Fungi, Fruit, Flowers and Foliage . We aim for an array of these elements on every session we run (weather and season permitting!) Event sold out or can't make this date? What To Expect Our 'Forage & Cook' workshops continued to surge in popularity in 2024, with pretty much all of them selling out well in advance. As well as our full day events , we also increased the number of shorter cooking events, allowing more people to join us finding, identifying and gathering wild ingredients before cooking them into a hearty meal as a group. 2 hours will be spent finding, identifying and gathering ingredients. This will then be followed by 1 hour of cooking, preparing and eating the harvest! Expect a focus on 5-10 specific ingredients, which will then be incorporated into 1 or 2 simple dishes, designed at showcasing each respective ingredient effectively. There will also be a wild tipple (soft alternative also available) served to the group and perhaps some 'table toppers' that your tutor will have made in advance to enhance the meal, such as a wild kimchi, a foraged ketchup or homemade seasoning. DURATION: 3 hours (approx 2 hours of foraging and 1 hour preparing and eating your wild meal) We like to keep some elements a surprise for the day, but here is what you can expect from your foraging workshop: a short introduction regarding the safety and format of the day discussions around foraging tips, safety, ethics, etiquette, sustainability and the law a circular walking route taking in different growing environments around the site. Expect a route of around 2-3km predominantly on footpaths a closer look at edible wild species and any poisonous lookalikes by a professional forager a chance to slow the pace of modern life down, meet new people and immerse yourself in a soul-nourishing activity, reconnecting with nature and discovering new flavours small tasters of wild food, drinks and other preserves - this includes freshly-picked items straight from the wild as we look to find the ingredients that will work best in our meal our workshops are run in a welcoming and informal fashion, where attendee questions and contributions are encouraged after the event, you will be sent a follow-up email containing a list of everything we found on the day and a full menu. Please do not expect photos or descriptions in this email - it is purely a list for reference purposes, and we find it helps people do further research in their own time. At the end of the session, there may be a small selection of our wild products and workshop vouchers available to purchase (card and cash accepted). This is a recent element of our events after enough attendees made enquiries about it - there is no pressure to buy anything having already bought tickets but sometimes people want a souvenir to take with them! Please speak to your tutor about this at the end. Who Is This Workshop For? Whilst children are welcome on these events, it is recommended that any child attending is over 12 years old and that for each individual child attending, they must be accompanied by one paying adult. No previous foraging experience is required for this event. Considerations must be taken for those with mobility issues - please get in touch to discuss. We strongly believe that foraging is for everyone , with all demographics welcome, regardless of age, ability, gender or ethnicity. The Autumn edition of our popular Vintage Fayre returns Sunday September 14th,10-3pm! £1 entry payable on the door. Presented by Ocho Vintage, we have a barn full of curated antiques, vintage, retro, collectibles from clothing to furniture and beyond! You can find the Ocho Vintage Pop up in the foyer of The Fold Cafe seven days a week The £1 entry fee paid on the door goes towards funding our community farm here where we grow organic vegetables regeneratively and care for this beautiful land There will be delicious street food, music and our organic cafe to enjoy The Fold has beautiful nature trails and a lake to wander around, you can bring your furry family members too, as our whole site is dog friendly. Discover this red-listed endangered Heritage Craft. During the workshop you will learn basic plaiting and tied straw techniques, producing several corn dollies that can be used as Christmas decorations, culminating in the showstopper Christmas Angel suitable for the top of your Christmas tree. You will be working with a heritage straw, Maris Widgeon, which is grown and harvested in the traditional way on a Staffordshire farm. We will explain some of the folklore, history and traditions behind corn dollies. Designed for beginners and those with some prior strawcraft experience, max of 8 participants. Min age 12 yrs old. A perfect introduction to this mindful and sustainable craft. All materials, and refreshments included, just bring reading glasses if you need them!
