As dawn breaks, participants clad in white ascend to the Cliffs of Bilibio, transporting wine by various means, in anticipation of the day's spirited events. After an intense wine battle, participants' white clothes will be coloured purple by the wine. The official commencement of the festival is led by the city mayor, who, in keeping with tradition, rides horseback to the Chapel of San Felices de Bilibio. Accompanied by a procession of individuals of all ages, the mayor hoists a banner upon the rocks, signifying the start of the celebration with a mass, followed by the launch of a rocket signaling the beginning of the wine battle.
